Tangy Tahini-Dill Dressing
This creamy, tangy dressing is perfect on a bed of greens and marries especially well with figs. With a few small tweaks, it also makes a great cucumber dip and a delicious sauce to accompany your raw falafel!
2 tablespoon tahini
2 tablespoon honey
2 tablespoon apple cider vinegar
1
teaspoon dill
Simply mix ingredients together in a small bowl and serve as desired. (I like it drizzled over fresh greens and chopped figs, hence the photo above). For a richer dressing, add more tahini; for more sweetness, add extra honey; for a thinner dressing and a tangier taste, add more apple cider vinegar.
Turn this into a delicious cucumber dip by decreasing the vinegar slightly and adding more dill. Try sprinkling a little cayenne to offset the coolness of the cucumbers—yum!
For falafel sauce, add cumin for a bit of smokiness and salt to taste. It doesn’t taste quite like yogurt sauce but the tanginess and the Middle Eastern flavors lend it a surprising degree of authenticity.

there is a no-dehydrator required falafel recipe on this site that is awesome. it isn't crunchy, but it's super delicious! (just type "falafel"... i don't know how to do the hypertext on this site)

unfortunately i've only eaten this with cooked falafel (made with love for me by someone else) -- with no dehydrator i'm not even at the stage of experimenting with raw falafel!
