Tarragon and Garlic Infused Dressing

A wonderful accompaniment to a huge bowl of greens and herbs.

Ingredients: 

200ml extra virgin olive oil
2 cloves of garlic
tarragon
juice of 1 lemon
30ml white wine vinegar
salad and ground black pepper

Preparation: 

Mix all of the ingredients in a bowl, check the seasoning, cover and leave at room temperature for at least one day.

Strain the dressing and whisk.

I like to serve this over a huge bowl of rocket, lambs lettuce, basil, oregano, mint, chives... I could go on.
