Tomato-Corn Salsa

Makes about 3.5 cupsA very fresh, very delicious version of salsa with corn. Put on top raw burgers, salads, tacos, or make some corn chips to scoop it up (I will be posting a corn-chip recipe soon)!
Ingredients:
3 vine-ripe red tomatoes, diced
3 ears corn, kernels only
½ red onion, chopped or
minced
½ sweet onion, chopped or minced
1 green onion, sliced thin
3 cloves garlic, minced
1 jalapeno (or more for hotness), diced
fine
fresh cilantro to taste, chopped fine
2 limes, juice only
2 tablespoon apple cider vinegar
Preparation:
Mix all solid ingredients. Add cider vinegar and lime juice last and stir. Allow to marinate for a couple hours and taste. Add more lime or vinegar if necessary.

So good, and pretty, too! Perfect now when corn and tomatoes are in season - nice! I backed off the onions a little but other than that I wouldn't change a thing!

Oh yum, love fresh corn and it's now here! Yah! Thanks I love mexican inspired dishes and this fits in to a tee with my favorite meals!
