Tropical Carrot Pate
This is a very easy treat when you have lots of carrots around or leftover carrot pulp from juicing carrots. You can make it sweet or spicy depending on whether you choose cinnamon only, or to add a little bit of curry. I like it sweet, myself. You are welcome to substitute dates for the raisins or some other sweet fruit you have on hand if you feel experimental.
Place all of the ingredients into your food processor and blend into a yummy carrot based treat! You may optionally add a dash of cinnamon, and/or a dash of curry depending on which way your spice buds would like to take you.
2 cup Carrots, Food Process
½ cup Raisins, Food Process
¼ cup raw coconut , Food Process
¼ cup raw cashews or other raw nut, Food Process
1 dash cinnamon or curry (optional), Food Process
Food Process all ingredients.
Spices are Optional. You can try it without any added spice first and then see if you like some cinnamon, (nutmeg, vanilla, curry, etc)
You can also add 1/2 a cup of chopped pineapple, at the end, but do not food Process the pineapple for best results.
You can also use Artisana Raw coconut cream in place of raw shredded coconut.
Have fun!
Recipe may be made nut free, too. Try it without added nuts first, if you’d like, and then if you are missing their crunch, go ahead and sprinke some into the food processor. Soaked Cashews, almonds or walnuts seem to go best in this recipe.
