a semi soft cheddar cheese
1 cup macadamia nuts, soaked 1 hour
2 tablespoon fresh lemon juice
¼ cup pine nuts,raw, or nutritional yeast,tastes like cheese,but not raw:(
½ cup sweet red bell pepper
1 clove garlic
1 tablespoon onion, green or white
½ teaspoon salt, or more to taste
½ cup water
¼ cup kanten agar flakes, packed to measure
(if using agar-agar powder use 4 teaspoons)
for a totally raw cheese,omit agar and use irish moss as stated in queenfluffs comments below:)
1.blend macadamia nuts,lemon juice, pine nuts,(or nutritional yeast),pepper ,garlic ,onion,and salt in blender till smooth. (this makes a nice cheese sauce at this point).
2.boil water and stir in kanten agar flakes until melted.note: for a totally raw cheese, use irish moss as described in queenfluff’s comments below, thanks queenfluff!!!!
3.cool slightly, add to blender and mix well.
4.transfer to 1&1/2 cup mini loaf pan (line with food wrap if not flexible) and chill several hours or overnight till firm.
5.unmold onto serving platter.serve with your favorite crackers.
variation:use a yellow pepper,and fold in some dehydrated hot pepper for a pepper-jack cheese,or some bacon bits,hmmmm. of course you can take your favorite cheese recipe and use thickener, and any shape mold,the possibilities are endless…
note: nutritional yeast and kanten agar flakes are vegan,but not raw.btw,i can’t tell you if this actually tastes like velveeta!this recipe was inspired by an old recipe on www.hacres.com.
some info on the 4 different crackers/breads… the ones that tasted the best with this cheese are the orange looking ones, peeking out on the left,1 cup medium ground flax seed,1 cup ground almonds,1 cup soaked and drained sun-dried tomatos (reserve some water),1 tablespoon each dried parsley,oregano,and basil,1 teaspoon chopped fresh rosemary,and 1/2 teaspoon salt, and enough tomato soak water to form dough.i’ll try to track down the other exact recipes:)
the swirls and star crackers are simply stenciled before dehydrating with spirulina,just place stencil on dough,sprinkle a tiny amount of spirulina (or any finely ground herb) on and rub into openings using a clean finger.the large stars are stenciled with turmeric and parsley i think:) paprika,cumin,chili powder,all work well,just match to flavor in dough.if anyone is interested ,the stencils are still available in the craft department of walmart .they are a pack of 3 (yellow) different designs ,with the swirl and star one on top,for $2.98:)
the gone raw breads are stamped with plastic letter stamps used for stepping stones,found in craft stores(maybe stamp the kids names,or “i love you”!).
