I’ve never been much of a fan of french fries, but absolutely love these. They’re crisp, spicy and refreshing.

I’ve often looked for jicama while food shopping, but can’t seem to find some. This is definitely on my recipe list when I do though! Would they by any chance have a name synonym?
kandace writes: (February 04, 2007)
I don’t know any synonyms for jicama. Here’s a picture of what you’d be looking for. I’ve found them at our coop and, I believe, at asian grocery stores.

Do these need to be in the dehydrator for a while?
ray writes: (March 17, 2007)
Nope, no dehydrating needed. Easy and quick!

they kind of look like a big, odd shaped potatoe! Where I live in Boston, they are with the veggies and ginger root!

If it helps Joseegonthier, Jicama is also known as a Yam Bean :)
So are they just crispy even without dehydrating? I find it difficult to imagine exactly what they would be like :0I

Jicama is sometimes dehydrated to make a sugar substitute that is raw!! :)..i saw it in the store the other day..they cut it up and dehydrate it and then make it into a powder..it is SUPER expensive like 30 or 40 dollars for about 3/4 cup…..:) crazy huh? xoxox

Ray, I made these last night and they were great! Thanks!

I’m eating my jicama fries right now! Found the jicama at whole foods last night, boy was I excited :) Jicama tastes odd to me by itself but the rest of these ingredients really makes a big difference. I might warm them in my dehydrator for a few minutes just to see if they’re more fun warm. But they’re just perfect not warmed anyway :)

Are cayenne and cumin Raw?
ray writes: (October 05, 2007)
I had assumed they were, but as with many such things, I can’t be 100% sure.

I just made these when I FINALLY found some jicama. I was skeptical, I’ll admit… but I LOVE them!! Thanks for an awesome, simple recipe. :)

Really fresh Jicama are hard to find this time of year, don’t buy them if they are even slightly wrinkled or soft, your best bet is a Mexican market. I love Jicama as is, but I have a one very yummy salad I have made for years, and I have made “fries”. I am a liberal cook, so it is really hard to give recipes, as I almost never measure, and just play with my food my way. I’ll try to post some, but I want to add pictures, cuz I love collecting goneraw recipes and the pics are great. Can I add them later?

I found a lot of fresh ones at Wild Oats (soon to merge with Whole Foods) the other day! I can’t wait to try this recipe!

These are great! Thanks for posting a recipe that requires no electricity.
BTW, I only used 2 tbls olive oil and had plenty of “sauce” to coat the fries. I let them marinate for a while in a sunny window and then later I could not stop munching them. (I will have to remember to double the batch next time!)

So I just made these fries and they are amazing! Instead of all the oil though I used half the oil and added some apple cider vinegar to add a lil tang!

I just made these and they are amazing! they even look like french fries.. I dont know how you came up with this, its genious! thank you!

I skipped the cayenne and cumin and added a ton of powdered garlic and a little vinegar. Odd, but the same way I used to eat fries. I love jicama and am lucky to live in Florida where we have year-round markets.

Ohhhhh the possibilities. I had read somewhere that the mexicans sprinkle with lime and chilli powder. The lime definitely adds a flair!

I’ve always been a fan of jicama; in slaws, salsa, chips, but never a recipe like this. These are fantastic!

I just checked to be sure that you are from Ontario because I am too and i finally found jicama at Zehrs. They go really quickly but ask your produce manager and he may be able to order some for you, I am going to make these. Did you peel them first?
littlemarie writes: (May 01, 2008)
