Rich Cheddar Sauce
Adapted from “Rejuvenate Your Life” by Serene Allison. I found it on Raw Food Talk. I find this sauce is creamiest when I use soaked cashews. It can be used for pizza, on top of warmed broccoli, in lasagna, etc.
PLEASE NOTE: I have listed this recipe in the Kids category, but babies and some young toddlers (such as those with a family history of nut allergies) should not eat any nut products. Please consult your pediatrician before serving nuts to your child.
Ingredients
- 1 cup raw cashews, sunflower seeds or almonds
- ½ large red bell pepper
- ¼ cup water
- 2 tablespoons lemon juice
- 2 tablespoons nutritional yeast
- 1 tablespoon tahini
- 1½ teaspoons sea salt
- 1 clove garlic
- 2 teaspoons onion powder (or a small slice of onion or 1 Tbsp of green onion)
Preparation
Blend all ingredients until creamy. Add more water if it is too thick.

As I made this sauce I blended it on high in the Vitamix for a few extra minutes. This process heated it just a bit. I poured it over my “taco” and Blam!!! Yummie. I had it for three days in a row. This really satisfied my cheese need:-) Thanks so much for this. Next I’ll try pouring it over marinated, dehydrated or raw broccoli. That sounds yumie toooo.

I made this exactly like the recipe except I added jalepenos and it tasted just like nacho cheese! I ate this on sliced tomatoes and jicima but it would be amazing with dehydrator corn chips or other mexican food.

I soak my cashews for 2 hours, then make this delicious cheese sauce. The first night, our family warmed up some broccoli in the dehydrator and had this cheese with it. It was soooo awesome!! Now we make it to have on hand in the refrigerator, so we can snack on it with our veggies (carrots, celery, broccoli, etc…). Love It!!! Thanks for posting this awesome recipe! This is very good. It reminds of Melty Cheeze Sauce I used to make as a cooked food vegan. I made it with soaked cashews like Simplyraw, and added some jalepeno pepper. I think this will be really good with cauliflower rice and tomatoes. I’m going to dehydrate some overnight to see how it turns out.

I made this today and I was so excited! It’s taste is reminiscent of cheddar cheese. I was really surprised! I really miss cheese so this is going to be a new favorite. I put it on sliced tomatoes and baby carrots. I also experimented and made some zucchini noodles with my saladacco and put the sauce over the noodles to make like a pasta with alfredo sauce. It was quite good. I decided to sprinkle some dried red peppers for a little extra heat. Yum! Next time I will use Jalepeno.

I made this yesterday – soooooo good! I took it to a friend’s house for a party, dipped some veggies in it and OMG yum! I got positive feedback from the vegetarians who tried it, and it definately does taste like a cross between hummus and cheddar cheese. The texture is exactly like hummus. I left out the nutritional yeast from the recipe because it grosses me out, and the recipe was just fine. I might even try this recipe with an orange bell pepper instead of the red for some real “cheese” color.

I used soaked cashews, tossed it over diced yellow squash and subbed 2 small hot peppers instead of bell pepper. Topped it off with some mashed avocado to add some coolness…..delish!!!

I’ve been vegan for a few years now and must say that, out of all the raw and cooked “cheddar” sauces that I’ve tried, this one is my favorite.
Included an extra garlic clove, substituted two jalapenos for the red pepper, added a generous dash of cayenne, and tossed the lot with a bowl of broccoli. Am midway through said bowl as we speak and suspect that I will be very, very sad when it’s gone.

What a wonderful cheesy sauce! I like that there isn’t oil added to the recipe. I didn’t have quite enough bell pepper, so that may have made the salt seem more prominent. I probably was able to produce 1/3 of a large bell pepper, using red and yellow pepper leftover pieces I had chopped from a previous meal. I did find my result to be a bit salty. Then I added half a serrano pepper, a dash of cayenne and an entire scallion bunch to make it a spicy nacho cheese.

I made the recipe with pecans. Brought it to a party that had no interest in raw or healthy eating and put it out without a word. It was the hit of the party and about 10 people asked for the recipe! I will cut the sea salt by 2/3 next time, it’s a bit salty for my palate. I’m not 100% raw so this morning I used it as a dip with hard boiled eggs, and as a spread on whole grain toast. Equally great both ways.

I didn’t use the nutritional yeast as it is not raw, so it wasn’t cheesy, it came out like a roasted red pepper dip. Remember that stuff? Maybe I put too much red pepper, but it was really gorgeous tasting anyway!

i have heard that unless the nutritional yeast is fortified (not all are) is doesn’t have that much B-12 in it.

rachel- the point of nutritional yeast is for the cultures not to be alive. Because i’ve read that if the cultures are alive in nutrtional yeast, they will cause intestinal parasites. Actually I remembered this was on brewer’s yeast so I’m not sure about the nutritional yeast.

I made it today and it’s really good! I used jalapenos instead of bell pepper and half of the salt. Next time I might add some tumeric for color. It already tastes like cheddar spread, why not make it look like it too! :-)

This is one of my favorites, i make it all the time. I just recently used this sauce to make crackers and it was just like a cheese-it, i use half cashews, half sunflower seeds, more salt, and 1 green onion, and jalapeno for spice. this one is a favorite for my husband who loves cheese!!!

I have only been raw a short time and other “cheeses” have just not been right. This, however, was right on! It was amazing! I put a little jalopeno peppers in it to spice it up a bit. OH MY, so good!!!! I made some zucchini pasta and cut up some carrots and broccoli and put on top of pasta, then poured the cheese sauce on top! OH so good! My husband said he felt like he had eaten a meat meal, he is not raw (only partially, breakfast and most dinners). He keeps asking when I am going to make it again! :-)

Amazing! This is one of the best recipes I’ve ever run across…satisfies my periodic longings for the dairy days of childhood! I didn’t use the nutritional yeast, not even sure how it works in this context or how it’s different than yeast used in bread. I’ve asked around my local shops but nobody seems to know either. Am I missing out on something that would make this taste even better (if that’s even possible:)?
