Blonde and Chocolate Macaroons
Serves 1 giant pig
I’m sorry I didn’t write quantities, I just don’t have the book from where this recipe came from right now. I’m gonna put the ratios in when I get home! Well anyway, my raw frind made some of these for me as a gift, and they were SOOOOOOOOOOO YUMMMMMMMMMMMMMYYYYYYYYYYYYYYYYYY!!!!!!! I honestly thought the blomde ones were better, but if you really like chocolate, maybe you’ll like those better. These ingredients don’t sound like one of the best things you’ll ever eat, but these are definately heavenly!
Note: for chocolate macaroons, replace the almond flour with an equal amount of raw cocoa powder.
Ingredients
- 3 cups dried shredded coconut
- 1½ cups raw almond flour
- 1 cup maple syrup or raw agave
Preparation
Mix everything in a bowl or standing mixer until nice and doughy. Form into balls and dehydrate them on a teflex sheet until they are firm, stiff, but still soft. I guess 12-20 hours. Stuff yourselves!

Can I use raw agave necter instead of maple syrup? Can I just grind up almonds fine and use that instead of the flour? Can’t wait for the quantities, I will make these when my green smoothie fast/feat is over. Then I will pig out on them! ;)

I use a cookie scoop for making things like this. You ought to open a raw sweet shop!

Luna blu-yes, you can use raw agave. And yes, you can grind almonds into fine flour. Except soak them and dehydrate them for 12 hours first, and then you can grind them into flour. Just be careful not to grind it into almond butter. Let me know how they turn out! 123-yeah, that’s a good idea for the cookie scoop! And yes I should open up a raw sweet shop. If everybody on this site cam to it, I’d give them all free food! lol

Chris-of course you can have a job too! My challenge is just to figure out how to open up a shop. lol Or I could just open up a really big stand outside my house and have all these premaid little goodies. :)

I make these with a little coconut butter which creates a chewier treat. I happen to think that these taste better without dehydration, kinda like a truffle… yummy.

Yeah, I think that’s true of the chocolate macaroons, but the white ones are heavenly when dehydrated! :)
