evergreen, you never fail to post an amazing recipe. Do you think if I dehydrated these for 3 or 4 hours they would soften into soft potato like fries?
In the recipe box it goes! Thanks so much I’ll pick up a fresh jicama sometime and let you know.

gorgeous.

rawkidchef, please tell us if that works. my husband’s complaint about jicama is that it is too watery.

I had the same problem with my jicama, it just wasn’t doing it for me, too watery and starchy. I dehydrated overnight, maybe a LITTLE too long, and now they are much more edible to me, although maybe too sweet now ;)

hi everyone….if you want to try dehydrating these, dry for about 3 hours,at 115 degrees..they kind of wilt, dry out a little, but will get very chewy if you leave them too long….bitt, you can make “fries” with daikon as well, but they have a sharp, spicy flavor, and are also kind of watery, so hubby may not like that idea!sorry,RawKidChef, these don’t quite make it to the soft potato texture:(i’m just learning to love the light crispness of these:)

These are terrific! ALL 4 of my kids 7 and under LOVED these. I’m introducing my kids (and husband) to raw by making 2 raw dinners each week. These will be on the top of the list!
