Refreshing tomato Gazpacho
It served me, though if with other dishes, it could easily make two smaller bowls of gazpacho.
A delicious and refreshing soup with the perfect amount of spice!
Ingredients
- 3 lg hierloom tomatoes, [2 for FP, 1 for handchopping]
- 2 green onions, [to chop by hand]
- 2 cloves garlic, [small cloves]
- 1 tablespoon apple cider vinegar, [about a tbsp]
- 1 dash cumin, cayenne, sea salt, [a dash of each]
Preparation
Alright, though everything was thrown together without any real measurements, this is approximately how much of each ingredient i used. First i put two of the tomatoes in the food processor along with the garlic, apple cider vinegar, and spices. I blended that until just before it turned completely liquid [so there were a few random chunks]. Next I chopped the last tomato and the green onions by hand into small pieces. Add them to the soup, stir and enjoy!
This is so simple.. i can’t wait to try it with golden tomatoes. I’m sure there are TONS of ways this recipe could be altered, and i look forward to seeing them!!

I bet some fresh cilantro would be delicious in this! Maybe even some dill. And an avocado sliced on top would round it out (even) more as a meal, though I know avos and tomatoes aren’t perfect re food combining (but I eat them together all the time…)

This sounds so great. I’m glad you specified heirloom tomatoes- it makes such a difference to have a good tomato. If you get the yellow ones that would be cool to swirl the two colors together. =)
