Adapted from “Asian Vegetable Nori Rolls,” in RAWvolution by Matt Amsden page 129. This is a fairly quick recipe I’ve made for dinner many times.
Sushi has always been my favorite food pre-raw. Especially avocado sushi! So i was determined to recreate it in a familiar way. I have never seen hemp used in a raw vegan recipe as an alternative to rice (perhaps because it's quite expensive) but the taste and the appearance are wonderfully similar, and it's great for you! These could not have been more successful at satisfying my craving.
I love having sushi in the "raw". My favorite is futo maki and this is a rendition of the original futo maki that is made with pickled radish, egg or tamago, veggie and rice. At the same time, I wanted to use the fresh peas preshelled from the farmers market. I combined it with the golden zucchini then a touch of Hemp Ginger dressing.
I just decided this afternoon to put anything good I could find in my fridge into a nori sheet...and it turned out amazingly.
This is for those, like me, who like all the flavors of maki and sushi rolls, but want a quick version. I didn't add the rice to mine in the picture.
