I like to serve this recipe with dips such as guacamole or salsa, but my favorite way to eat these is to top each cracker with a slice of avo spread like butter and a slice of tomato. These crackers serve as a great substitute for bread for me. I don’t crave bread at all as long as I can have these little beauties. This recipe is based on a recipe by Elaina Love, Pure Joy of LivingFoods, but I have made a few changes.
My mom makes this for me every weekend when I go back to college. The fine cauliflower takes the place of the soaked bulgur because I don’t eat grains. I love this stuff!!
This recipe is an adaptation of several recipes – two by Chad Sarno, and one by Vanessa on GLiving. Chad Sarno calls it “Trio of Shaved Cabbages with Sweet Sesame Vinaigrette” – it really can be a simple salad or an elegant party dish. I just use what I have on hand, and the vinaigrette is never the same twice, but this always turns out so tasty. You can also add sliced baby bokchoy, hemp seeds, etc. Hope you enjoy it!
