I like to eat this as a soup, but you could just as easily pour it over ice and drink it. Of course, this is non-alcoholic but if you want to add alcohol, I'm sure you'll know what to do!
This is a quick, simple recipe that makes a great appetizer or snack. To turn it into a larger salad, just add more dressing and greens. Delicious! Serves 2.
Of course this soup doesn't really have tortillas in it, but that's what it reminds me of. These amounts are all approximate because I never measure! Just play around until you like it!

Autumn is here. It's yummy soup season. I created this raw soup for my Mom based on a cooked African soup recipe. It's quick, easy and delicious. The colors are very inviting as well. Your vitamin and spices will gently warm it just enough to create the illusion of a warm winter West-African wonderland!
