I really like Pumpkin seeds and they have lots of vitamins and minerals like Iron (which I have worried about going raw) so everyday I soak some for the next day for something either smoothie or cereal then I experimented with this after seeing a raw sesame dip video and just made it up as I went. This recipe was my 2nd attempt at and it turned out better than my first (no oil, raisins or spinach in it)

When I make this I use goji berries and cranberries instead of currants and raisins and I soak the shredded coconut (or use fresh.)
It's delicious, and definitely a full meal, I take it to dinner parties where I know it'll be the only thing I can eat because it's satisfying for me and everyone tries it because it's so colourful.
(I often don't tell people it's raw pumpkin, they just think it's carrot.)
I created this recipe the other day because I have been craving pumpkin pie flavor non stop and I figured why not incorporate the seasonal flavor into my post-workout protein shake. It tastes so yummy by the way!
I saw an incredible pumpkin roll in a catalog that made my mouth water. I immediately started dreaming up how I could make one with a raw recipe. This was what I came up with on my first try, and my totally SAD family gobbled it up the past two days at Thanksgiving. It even held its own with the SAD desserts! Sorry I didn't get a picture of it before it disappeared, but I will definitely make another and post a picture.
