My friend, Megan, has joined me on the raw food journey and has been the main inspiration for this decadent dish. She was also a great help as we prepared our layers of cream, blueberries, and bananas. We created this as we went, having only her grandma's blueberry banana pie to replace with an organic raw version. With these beautiful 4th of July Berry Cream Cups, you’ll have all the neighbors coming to your house! Layered with fresh fruit and sweet cream, these are the perfect red, white and blue dessert! Make these in the morning and store them in the fridge till you are ready to start the food and fireworks!
Last summer I made several batches of Matthew Kenney's raspberry-lime granola. Boy is that stuff gooood. However raspberries (even frozen ones) are a bit too expensive right now. So I decided to opt for blueberries (thawed out wild blueberries from Trader Joe's) and then went ahead and altered the recipe a bit based on what I had around the house for nuts and seeds.
Pile a huge amount of greens in a deep bowl, then sprinkle fresh blueberries over. Chop or scoop the insides of one or two organic grapefruits and sprinkle that over too. Tastes good with a mango dressing or such.
A confirmed salad lovers new addiction! I bought a bag of fresh (frozen) wild Canadian blueberries for my smoothies, when I thought I might try something new for my dressings repertoire. It had barely lasted me 2 days because I am craving it's sweet delicious-ness! I will have to re-make it and take a picture because I ate it too fast...
