Savory Oat Rice
We have finally found a way to make raw rice! The secret is not to use rice at all, but raw, soaked oat groats. You can buy the raw oat groats in bulk or bagged packaging. They look just like brown rice. Soak them for 24 hours and follow the recipe! It is amazing how much this tastes like a rice dish, and satisfies just like rice too. However, the germinated oats give you a ton of energy, which of course cooked rice does not. The men in my family love this recipe as it is high in protein!
Chocolate & Orange Mousse Cakes
I created this dessert specially for a recent raw food demonstration and lunch. My guinea pigs loved it! They were even more amazed to try a dessert made from avocado. This healthy fruit, rich in natural oils gives a perfect way to make an easy raw-vegan mousse. I combined it with a crunchy buckwheat base to provide a rich, smooth couple-of-bite-size desserts. Tuna Salad
This really does remind me of tuna salad, in both texture and appearance! It's quick and easy to make, and great stuffed into romaine lettuce wraps. Very flavorful, but delicately so. Juicy, sweet, and savory, just like tuna salad should be! Great for a snack or light lunch. It's delicious and filling, but not SUPER long-term satisfying, if you're needing something like that. Would make a good appetizer or light tea time snack for small informal gatherings where you just want a light finger food to munch on nonchalantly over conversation.
Don't skimp on the dulse flakes ;)
A fun presentation is to stuff this into tulip blossoms and serve with white rose tea or green marigold tea
