else raw, just do what works for
you!
also, i had absolutely no idea what to call this,
i ate this for dinner tonight as well as last night.
but it seems more like a
"breakfasty" type dish.
Broccoli Cream Soup w/ mushrooms
Was craving a zippy broccoli soup -- this is what I came up with. The jalapeno pepper and garlic give it some kick, so reduce the amounts if you prefer a more bland taste. Dehydrated mushrooms add a nice chewy texture -- but fresh mushroom work well too.
Thai Tomato Salad
This is a quick, simple recipe that makes a great appetizer or snack. To turn it into a larger salad, just add more dressing and greens. Delicious! Serves 2.
Raw Thai Spring Rolls with "Peanut" Sauce
This recipe is based on one my friend Ali made. Hers was a non-raw version that tasted so good, I knew I could make it just as good raw-style. We got lucky on this one, just replacing a couple of ingredients and marinating the mushrooms instead of cooking them-- it's now one of our favorite things to eat! This was even a hit with our carnivorous family members-- a great crowd-pleaser! The peanut sauce is actually made with almond butter instead of peanuts because peanuts are not technically raw, but it tastes just like the real thing!
Raw Cherry Tarts
This recipe could become any number of things if you switch out a few ingredients. You could use any fruit you like and play around with the size-- this would be great as a full-size pie too!
