I made this for the raw falafel recipe posted on this site. it went really well together.

Cauliflower makes a nice starch substitute I think. Also, it gets better as it sits, so make more and eat leftovers if you like to have things on hand.

You can get creative with this as it’s just a base for better things.

You can add marinated mushrooms, chopped bell pepper, chopped olives, etc.

You can also use this to stuff a pepper or a tomato for a nice presentation.

Enjoy =)

jkmn- the weirdest place: marshall's. sells organic, cold-pressed evoo that actually says it hasn't been heated over 92.5 degrees on the front label. it's 5.99 too!

otherwise, look for unfiltered, cold-pressed... because the US doesn't belong to the olive oil federation (or whatever it's name is) that controls labeling of olive oil,

"cold-pressed" and "extra-virgin" aren't actually regulated. you can always call the company and ask.

This couscous was amazing. I whipped this up for lunch one day and gobbled it up - it was so good! Even my SAD eating bf was all over it.

Sciabica makes amazing cold pressed olive oil. You can order it online www.sciabica.com

renoir- so glad!

aecsaki- if you miss starch this can also be done with any winter squash (a little sweeter), but you'll have to pulse in a food processor to break it down.
