1 dozen cookies

Ingredients
1 cup cashews (soaked)
10 figs (soaked)
1 cup coconut (dried)
1 teaspoon vanilla
1 tablespoon cocoa
Recipe Directions
1. Combine all ingredients in a food processor with a bit of water to make a dough.
2. Shape into cookies and place on dehydrator (I used a mesh sheet). Dehydrate at 115 Fahrenheit until crisp on the outside and chewy in the middle.

These aren't that sweet, so if you want a breakfast bar or just something to snack on, these are great. I'm going to try making them with a little agave or raisin so they taste more like a cookie.
