Ooh how is the cactus? That's actually readily available in a Mexican market here, but I've never had it. Do you cut the green outside off or what? They sell it without any spines or anything.

Are these the relatively flat and kind of flimsy cactus pieces? I've seen those in the grocery store, but had no idea how to use or even try to eat them. If so, you're saying to eat the outside skin with the dark brown spots where the spikes used to be...cool. Yet another recipe I'm going to play around with! yay Thanks for the not-so-ordinary recipe.

Hi Brawyn! I buy mine organical, locally grown from the Farmer's Market. They take the spikes off right before selling. Grocery stores generally do the same, I've always seen it ready to use in grocery stores. The taste of catcus is similar to a MILD green bell pepper. It's thick enough to cut into good sized chips. It's moist and sticky inside which makes it WONDERFUL in raw soups (fresh corn, catcus and avocado! or avocado, catcus, tomato!) or guacamole to unite things together. I have used mine for a raw pizza crust before and that was delish too! I encourage you to try it. Raw food is all about expirimenting! Let me know how you like it : )
