1 Zucchini for a serving -

Ingredients
1 zucchini
1 roma/plum tomato, chopped
¼ cup raisins
1 teaspoon olive oil
1 pinch curry powder, (large pinch for lots of flavor, or small pinch for a lighter hint)
Recipe Directions
Use a veggie peeler to slice zucchini into noodles. Place into a bowl with tomato and raisins; then toss with oil, curry powder, and salt.
