Ingredients
ICE CREAM MIXTURE
1 pound cashews (soaked for 5 hours)
1 tablespoon cashew butter
1/4 pound cacao butter (melted)
3/4 cup agave nectar (or to taste)
1/2 teaspoon sea salt (or to taste)
1/2 teaspoon vanilla powder
MINT CHOCOLATE CHUNK WITH PISTACHIOS
1 part of the above ice cream mixture
1 cup chocolate chunks (recipe below)
1/2 handful of fresh mint
1 teaspoon spirulina powder (adds a nice green color)
1/2 cup pistachios (shelled)
STRAWBERRY GOJI BERRY GOODNESS
1 part of the above ice cream mixture
1/2 cup strawberries (frozen)
1/2 cup strawberries (freeze dried)
1/2 cup goji berry (powdered)
VANILLA MACA CHOCOLATE
1 part of the above ice cream mixture
2 tablespoons cacao powder
2 teaspoons maca powder
1/2 teaspoon vanilla powder
Recipe Directions
1. Begin making nut milk by combining 1 pound soaked cashews with 3 cups of water in a high speed blender. Strain half the nut milk through a nut milk bag and the other half set aside.
2. Combine the strained and non strained nut milk together and blend with rest of the ingredients until silky smooth. This will be the base for your other flavors. Divide this mixture into 3 parts.
CHOCOLATE CHUNKS
3. Melt 4 ounces cacao butter in a glass bowl and mix with 4 tablespoons cacao powder and 3 teaspoons minced fresh mint and/or organic mint extract.
4. Stir in 3 tablespoons agave or yacon syrup and a pinch of sea salt. Stir it all until well combined and then spread a thin layer of it on some parchment paper.
5. Chill in the freezer to harden. Break into chunks.
6. Blend the ice cream mixture with fresh mint and spirulina powder until well combined.
7. Put into an ice cream maker for 45-60 minutes. Then mix in the chocolate chunks and pistachios.
8. Blend the ice cream mixture with frozen strawberries and the goji powder until well combined.
9. Put into an ice cream maker for 30-45 minutes. Then mix in the freeze dried strawberries.
10. Blend the ice cream mixture with cacao, maca, and vanilla powders until well combined.
11. Put into an ice cream maker for 30-45 minutes. Then mix in the freeze dried strawberries.

By RawGuruThis recipe was inspired by wanting to recreate mint chocolate chip ice cream without the need to use young Thai coconuts.
After several tries and an ice cream maker (Cusinart Supreme™ Commercial Quality Ice Cream Maker) I came up with 3 flavorful and melt in your mouth ice cream flavors.
If you do not have an ice cream maker, you can freeze the mixture in ice cube trays and run it through a juicer. You can also blend it up with a little nut milk.
