Ingredients
2 to 3 large sliced beets (soaked overnight)
8 to 10 mint leaves
Juice of half a lemon
1 dessertspoon of honey or agave nectar, or 2 dates
2 tablespoons coconut meat
2 tablespoons coconut juice
1 cup water
Recipe Directions
1. Blend all ingredients until very smooth. Add more water if necessary.
2. Freeze. Blend again before serving.

By JaimieThis recipe requires freezing, which I think isn't considered raw by everyone, but here it is anyway.
It's sweet and very fresh tasting (I love mint).
Perfect for hot summer nights and with the most brilliant color!
